Ingredients:
– 500g of potatoes
– 200g of smoked lardons
– 4 eggs
– 2 tablespoons of white vinegar
– 4 tablespoons of olive oil
– 1 tablespoon of mustard
– Salt and pepper to taste
– Fresh chives for garnish (optional)
: Instructions:
1. Cook the potatoes with the skin in salted boiling water until tender. Drain them and let them cool before peeling and cutting into pugs.
2. Cook the eggs in boiling water for about 8-10 minutes. Loose them and cut them in quarters.
3. In a frying pan, bake the smoked lardons until golden and crispy.
4. In a bowl, prepare the dressing by mixing olive oil, white vinegar, mustard, salt and pepper.
5. In a large salad bowl, mix the potatoes, lardons and eggs.
6. Pour the dressing over the salad and mix gently.
